Dicing Onion & Cilantro

Separating stems from delicate leafy tops is the flavor secret.

1 Large White Onion (1/4-inch Dice)

Halve root-to-stem, peel, make horizontal cuts, then dice into uniform 1/4-inch cubes for even sweating.

Cilantro Stems (Minced)

Cut the bottom 2 inches of stems and mince finely. These go into the hot tallow sauté to infuse the fat.

Cilantro Leafy Tops (Rough Chop)

Roughly chop the leafy greens and stage in a small ramekin. Keep strictly for finishing at the end.

Cilantro stems contain the deepest heat-stable flavor oils, while leaves wilt if boiled.

Don't pressure cook all 1 lb of brisket together or it will shred into fibers.

Part A: ~1/3 Cup Bark & Fat

Base Bloom

Finely mince the crispy peppery bark pieces. Sautéing these early melts smoked fat directly into the cooking oil.

Part B: Remaining ~3/4 lb

End Simmer

Cut flat or point into bite-sized 1/2-inch cubes. Reserve on a plate until after the beans finish cooking.

Frozen Garlic & Jalapeño

No defrosting, no hazardous slicing of rock-hard frozen produce.

4 to 6 Whole Peeled Garlic Cloves

Leave completely whole and frozen. They sauté for 45s, pressure cook into roasted garlic softness, then dissolve right into the bean broth.

1 Whole Frozen Jalapeño (Pierced)

Place pepper flat on board. Carefully puncture 2 small slits through skin with knife tip. Drops straight into liquid whole.

Safety warning: Never attempt to finely dice a rock-hard frozen jalapeño; puncturing whole releases aromatic oils safely.

Add 2 tbsp Smoked Beef Tallow

Allow fat to melt until shimmering across the liner bottom.

Sauté Onion & Cilantro Stems

Stir for 3 to 4 minutes until onions soften with light golden edges.

Why Tallow? Homemade brisket tallow coats every bean cell in deep pit-smoke flavor before boiling begins.

Unleash fat-soluble spice compounds without burning.

Add 1.5 tsp ground cumin, 4–6 frozen garlic cloves, and the 1/3 cup minced brisket bark directly into hot tallow.

Stir constantly as spices toast and garlic skin blisters.

Step 03 • Critical Fond Scrape

Deglaze Pot Floor

The most important step to prevent the dreaded "Burn" error.

Pour 1 Cup Liquid Immediately

Pour 1 cup of broth or water onto the hot stainless steel surface.

Scrape Bottom Completely Clean

Use a wooden spoon or silicone spatula to vigorously scrape up all caramelized fond bits.

Mild Smoky: Remove whole pepper and discard stem/seeds.
