Pull blade heel-to-tip smoothly at a steady 3-second cadence. Alternate left & right guides 2–3 times without pressing down.

Why Natural Release is Non-Negotiable:
Quick-releasing starch-dense beans blows foamy hot starch out the vent and bursts the bean skins. Wait the full 20 minutes before turning valve to Venting.
Switch Instant Pot back to Sauté (Low).
Use the back of a ladle to mash the melt-in-your-mouth garlic cloves and beans against the liner wall. Stir into broth to create a rich gravy.
Bring everything together right before ladling.
Simmer gently on Sauté Low for 3 to 5 minutes until meat is heated through. Press CANCEL.
Stir in a fresh squeeze of lime juice or 1 tsp vinegar to slice through the heavy beef tallow richness.
Fold in reserved chopped cilantro leaf tops right before serving.
Serve Hot in Deep Bowls
